Meals are served on the front veranda overlooking the square, or in the front room of the hotel which has two large windows facing onto the square. When groups come, we all dine together at night in the light of oil lamps, with live harp music, even though some of our visitors may be staying in family homes.

For breakfast, we have items from both traditional Paraguayan and international menus, and anticipate that most visitors will want to taste local dishes while not being limited to them. The Paraguayan dishes we can offer include mbeju, rora con leche, dulce de leche and cocido (a maize cake, a maize dish with milk, caramelized milk and a tea made from the yerba mate); but we also serve internationally familiar foods like fruit juice, cereal, boiled eggs, wholemeal bread or toast with guava jam, coffee or tea.

Groups will normally eat the same menu, with the exception of vegetarians, for whom we will provide an alternative.

The tap water of Santa María is treated and it is rare for anyone to have problems with it, but we have plentiful supplies of bottled mineral water in any case. The hotel has an 100-litre water tank installed to provide relief in the event of the mains water failing. In addition to mineral water (sparkling and still) we offer Paraguayan beer, Argentinian and Chilean wine, bottled fizzy drinks and fresh fruit juices. For after dinner we suggest you try the best Paraguayan caña (sugar-cane spirit similar to rum) or one of the liqueurs made by the Benedictine monks of the monastery at Santiago.
